SWIMMING CRAB

Swimming crab or jaiba (Callinectes belliucosus) meat is very low in cholesterol, is high in protein content and has a delicious, slightly sweet flavour. In addition, the soft jaiba is considered to be a high quality product as it does not have the hard structures commonly found in the dishes prepared with jaiba pulp.
